Just Peachy

This morning I added just three ingredients to my morning yogurt. A fresh peach, a small banana and a sprinkle of blueberry muesli.  I went without the nut butter today which was hard to do but I was unsure of how it would meld with the peach. I think I made the right decision sticking with JUST the peach because the flavor really stood out and added a nice texture to my normally smooth bowl. IMG_0249

I ate this bowl slowly with a cup of tea and some reading material that I picked up for free at Whole Foods yesterday. This publication called edible Boston comes out quarterly and focuses on local farms, local restaurants and basically eating “slow” in the Boston area. This quarter they have features on Victory Gardens, Canning and Pickling, and North Shore Clams. I am paying particular attention to the canning section to see if there is anything to learn as I plan on preparing a step-by-step post on making homemade pickles this weekend!

And I should have known that doing without the nut butter would catch up with me this morning. Around 10:15 I had a bite of an almond flour cookie. It left me feeling more satisfied which is what I was looking for.

I am out for the rest of the day and will be eating lunch on the go so expect a random assortment with an attempt at including all the key players!

“Love that dirty water…”

In an effort to enjoy the day, and get a little bit of exercise, I decided to take a picnic lunch down to the banks of the River Charles. Pre-Injury I would have strapped my back pack on and run there but because I am really trying to heal my ankle in the proper way, I opted for the #47 bus. It dropped me off by the B.U. bridge where I then took a short walk along the river until I came to the dock.

When I left the apartment it was slightly overcast but warm. My thought was that it wouldn’t be too hot because the sun wasn’t shining. By the time I arrived the sun was shining through and it was H.O.T.  Don’t get me wrong, I love the sun but I really wished that the water surrounding me wasn’t the somewhat polluted Charles and that I could have jumped in and cooled off. This peach cooled me down a bit.

I dug into my lunch around 12:30 and while it was very satisfying I am glad to report that this is the last you will see of the veggie medley from last Saturday, it’s finally gone. Darin doesn’t eat leftovers as willingly as I do so it takes me awhile to get through meals sometime because I have a habit of always cooking too much!

I want to point out the utensil that I use for picnics and packed lunches because I find it to be so useful with all three built into one!  It was a gift from my family who traveled to Sweden last summer to visit some of our relatives that still live there. I really enjoyed the fact that it was purchased in Sweden but was slightly bummed when I found out that you can purchase them at L.L. Bean. Oh well, still cool.

My ankle was feeling really strong and since I had the air cast on for support, I walked over to Newbury Street and sat down with an iced green tea and my book for a little while. This green tea totally hit the spot! I know that I could make this for myself at home for a fraction of the cost, however when you don’t have a backyard or a porch to enjoy it on it’s worth the $2.25.  In addition you get to enjoy people watching on Newbury which is priceless.

Darin and I are planning a dinner out tonight so stay tuned to find out which restaurant we choose!
