Draggin’
I apologize for the fact that I have been slacking on my posting lately. I skipped Monday because I was just too busy with travel and coming back to reality here to post (plus I was behind from such a food filled weekend!). I am going to try and get back to my normal posting schedule but might have trouble tomorrow since it is another busy day! Speaking of busy days, I was on the go for most of the morning (physical therapy, yoga, dry cleaning, trader joe’s, cvs, intense laundry, cleaning etc.) For breakfast I made myself a super charged bowl of Cashew Butter Oats with Apple Butter on top. I simply heated the oatmeal packet with water, stirred in a tablespoon of cashew butter while the oats were still hot and then topped with whatever I felt like. This morning I used the homemade apple butter my mom sent me home with, coconut, currants and a splash of almond milk.
This bowl held me over through P.T. and half of yoga but midway through my twisting triangle sequence I heard my stomach rumbling and I started to feel weak! I made it through the rest of class but literally sprinted to Starbucks to refueld as soon as I could. This chocolate banana smoothie made with skim milk was the perfect snack at 11:00 a.m. when I had a ton of errands still to do.
Eventually I came home and made a proper lunch. A new take on an old classic. I used pumpkin butter and dijon mustard (swirled together on the bread) since I didn’t have honey mustard which I was craving. This was a great substitute and I recommend trying it out with other sandwiches. The sweetness of the pumpkin butter paired with the sharp mustard flavor really kicked my turkey bologna and havarti up to the next level. I also grilled it which helped immensely.
I munched on some cauliflower and broccoli dipped in bean dip too.
And of course no sandwich is complete with out a pickle!
At this point I crashed. I don’t know why because I felt like I had slept o.k. the night before but maybe a weekend filled with lots of activities was catching up with me. I watched two Dexter episodes (fell asleep during the last one) and then it was time to get ready for work. I grabbed the last of the fruit jellies from TJ’s. As much as I like these it’s too hard having an entire container around! I am glad they are gone.
Tonight we were celebrating one of the patient’s birthday’s so I actually ate birthday cake and fro yo BEFORE my dinner. Sometimes you just have to be flexible. I also had a small piece of french bread sandwich which was being served. My real dinner was very simple because I knew that there would be tempting treats to eat tonight. I roasted some carrots and beets and then served them both on a salad with balsamic and olive oil. Delicious and it totally cleansed my palate after all that sugar!
And as I am writing this I just remembered that I have Kale chips cooking in the oven! I smelled something weird and realized that it was my kale burning away. Darn! I really wanted the kale from Drew’s farm but somehow brown, burnt kale isn’t that appealing right now. Oh well.

That oatmeal looks good. Oatmeal always looks good to me but never fills me up. D’oh.
pumpkin butter + dijon = genius! i would have NEVER thought to combine these, but i can almost taste how wonderful i bet this is… awesome idea girl!
I second that the pumpkin butter + dijon is brilliant. I can just imagine how well the flavors go together!

I love grilled sandwiches, I think it makes ALL sandwiches about 100x better.
Sorry about the burned kale. Sandwich looks yummy, though, and the birthday party must have been fun! I burned my biscotti yesterday and felt like I was draggin’, too…
